Almond Butter Coffee Squares
Batter for the base:
1 cup granulated sugar
1 cup all purpose flour
1 cup melted butter
1/2 cup butter
1/2 cup granulated sugar
1/2 cup sliced almonds
1 Tablespoon all purpose flour
1 Tablespoon milk
1 teaspoon pure almond extract
NOTE: USE A 9" X 13" PAN THAT IS "BROILER SAFE"
Preheat oven to 350 degrees. In a medium sized bowl, beat together eggs,
sugar, flour, and butter with an electric mixer. This batter will be very
thin and just barely cover the bottom of the baking pan. Pour the batter
into a greased 9" X 13" baking pan and bake for 20 - 25 minutes, or until
lightly browned around edges. Remove from oven.
To make topping:
In a small saucepan, melt butter on medium heat and stir in sugar. Add
almonds, flour and milk, stirring constantly. Add almond extract and
continue to stir until it is thickened.
Pour the topping over baked cake, spreading lightly with a spatula to
cover the entire cake. Place under the broiler until shiny brown and
bubbly. Watch very carefully to prevent burning. This should only take
20 - 30 seconds. Let cool and cut into squares.
